  • 3 cloves garlic, minced

Instructions
 

  • Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
  • Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté for 3 minutes until translucent. Then, add the minced garlic and sliced mushrooms, cooking for another 5-7 minutes until the mushrooms are soft and browned.
  • Create the Cream Sauce: Pour in the chicken broth and scrape the bottom of the skillet to deglaze, making sure to incorporate all the flavorful bits. Bring to a simmer, then reduce the heat to low. Stir in the heavy cream and thyme, letting it simmer for about 5 minutes until slightly thickened.
  • Combine and Finish Cooking: Return the chicken to the skillet, nestling it in the creamy mushroom sauce. Let it cook together for an additional 3-4 minutes, allowing the chicken to absorb all the flavors. Adjust seasoning with salt and pepper as needed.
  • Serve: Plate the chicken and spoon the creamy mushroom sauce generously over the top. Garnish with chopped fresh parsley for a pop of color.

Notes

Serve with rice or pasta to soak up the sauce.
