Instructions
In a large mixing bowl, combine the rolled oats, hazelnut butter, honey (or maple syrup), cocoa powder, and vanilla extract.
Stir the mixture until well combined and a sticky dough forms.
Fold in the dark chocolate chips and chopped hazelnuts, ensuring they are evenly distributed throughout the mixture.
Use your hands to scoop out small portions (about 1 tablespoon each) and roll them into balls.
Place the energy bites on a baking sheet lined with parchment paper.
Once all the mixture is rolled into balls, refrigerate the baking sheet for at least 30 minutes to firm up the bites.
After chilling, transfer the energy bites to an airtight container and store in the fridge for up to a week.
Notes
Serve the bites in a small bowl or on a decorative plate, and dust them lightly with cocoa powder for an elegant look. You can also place them in decorative paper cups for a fun presentation!
