Instructions
In a large pot of salted boiling water, cook the cheese tortellini according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
Add the cooked tortellini to the skillet, along with the fresh spinach, sun-dried tomatoes, and pesto. Stir gently to combine everything.
Pour in the heavy cream and sprinkle the grated Parmesan cheese over the mixture. Stir well until the sauce is smooth and coats the tortellini.
Allow the mixture to simmer for about 2-3 minutes, letting everything meld together and the spinach wilt. Season with salt and pepper to taste.
Serve the creamy pesto tortellini hot, garnished with pine nuts if desired.
