Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until translucent, about 5 minutes.
Add the minced garlic and sauté for an additional minute until fragrant.
Add the diced chicken breast to the pot, stirring frequently until it's browned on all sides, about 5-7 minutes.
Stir in the cumin, oregano, smoked paprika, salt, and pepper, ensuring the chicken is well-coated with the spices.
Pour in the chicken broth and add the green chilies, beans, and corn. Bring the mixture to a boil.
Once boiling, reduce heat to low and let it simmer for 20 minutes, allowing flavors to meld.
Stir in the sour cream and cream cheese, mixing until fully incorporated and the chili is creamy.
Adjust seasoning if needed, and let it simmer for an additional 5 minutes.
Serve hot, garnished with fresh cilantro and sliced jalapeños if you like some extra heat.
