Instructions
Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
Wash and dry the apples. Using a mandoline or a sharp knife, slice the apples into thin rounds (about 1/8 inch thick). Remove seeds if they are present.
In a small bowl, mix the ground cinnamon, sugar (if using), and a pinch of salt.
Toss the apple slices in the cinnamon mixture until each slice is evenly coated.
Lay the apple slices flat on the prepared baking sheet in a single layer, ensuring they do not overlap.
Bake in the preheated oven for 1 hour, then flip the apple slices for even cooking. Continue baking for another hour or until they are crispy and slightly curled.
Once done, turn off the oven and leave the apple chips inside for an additional 30 minutes to help them crisp up.
Allow them to cool completely before serving. Store any leftovers in an airtight container.

Adjust sugar based on the sweetness of the apples used.
