Instructions
In a large bowl, whisk together the instant vanilla pudding mix and milk until smooth and thickened, about 2 minutes. Set aside.
In a separate bowl, beat the heavy whipped cream and vanilla extract until soft peaks form. Gently fold this into the prepared pudding mixture until well combined and creamy.
In a trifle dish or individual glass cups, layer the dessert starting with a layer of vanilla wafers at the bottom.
Add a layer of banana slices over the wafers, followed by a generous layer of the pudding mixture.
Repeat the layers (wafers, bananas, pudding) until you reach the top of the dish, finishing with the pudding layer.
If desired, sprinkle toasted coconut flakes on top for added flavor and texture.
Chill in the refrigerator for at least 2 hours to allow the flavors to meld together and for the wafers to soften slightly.
Before serving, garnish with fresh mint leaves for a pop of color and freshness.
Notes
Serve in individual cups for a charming touch, and drizzle a bit of caramel sauce over the top for extra sweetness if desired.
