Instructions
Begin by spiralizing the zucchinis to create long noodle shapes. If you don’t have a spiralizer, you can use a vegetable peeler to make thin ribbons.
Heat a large skillet over medium heat and add the unsalted butter. Allow it to melt and bubble gently.
Once the butter is melted, add the minced garlic and red pepper flakes. Sauté for about 1 to 2 minutes, until the garlic is fragrant but not browned.
Add the spiralized zucchini noodles to the skillet. Toss gently to coat the noodles in the garlic butter sauce.
Cook for about 5-7 minutes, stirring occasionally, until the zucchini noodles are tender but still have a slight crunch.
Remove the skillet from the heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
Plate the zucchini noodles in bowls, garnishing with freshly chopped parsley and serving with lemon wedges on the side for a bright finish.
