Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Toss the cut fries in a bowl with olive oil, garlic powder, oregano, salt, and pepper until well coated.
Spread the fries in a single layer on the prepared baking sheet. Bake for 30-35 minutes or until crisp and golden, flipping halfway through.
While the fries are baking, prepare the Greek topping. In a bowl, combine the diced cucumber, halved cherry tomatoes, and chopped red onion to create a fresh salad. Season with a pinch of salt and pepper.
In another small bowl, mix the Greek yogurt with lemon juice, fresh dill, a pinch of salt, and pepper. This will be your tangy sauce.
Once the fries are done, remove them from the oven and let them cool slightly.
Top the crispy fries with the cucumber-tomato salad and crumbled feta cheese.
Drizzle the yogurt sauce generously over the top, then garnish with sliced black olives for an extra burst of flavor.
