Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken (or turkey), breadcrumbs, Parmesan cheese, beaten egg, minced garlic, and grated ginger. Mix well until all ingredients are evenly incorporated.
Add the honey, soy sauce, sesame oil, black pepper, and salt to the meat mixture. Stir until everything is thoroughly mixed together.
Using your hands, shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for 20-25 minutes or until they are golden brown and cooked through (internal temperature should reach 165°F/75°C).
While the meatballs are baking, prepare the glaze by mixing 1 tablespoon of honey, 1 tablespoon of soy sauce, and a pinch of grated ginger in a small bowl. Heat on low until warmed through, stirring occasionally.
Once the meatballs are done baking, remove them from the oven and brush the honey garlic ginger glaze over each meatball to coat.
Transfer the glazed meatballs to a serving platter and garnish with sliced green onions and sesame seeds if desired.
Notes
Serve on a decorative platter with toothpicks for easy picking. Great over rice or noodles.
