Instructions
In a mixing bowl, combine honey, soy sauce, lemon juice, minced garlic, grated ginger, sesame oil, and red pepper flakes (if using). Whisk until well blended.
Place the peeled and deveined shrimp into the marinade and toss to coat thoroughly. Cover the bowl with plastic wrap and let it marinate in the fridge for 30 minutes.
While the shrimp is marinating, preheat your grill to medium-high heat (about 375°F / 190°C). If using wooden skewers, soak them in water for 20 minutes to prevent burning during grilling.
Thread the marinated shrimp onto the skewers, ensuring they are evenly spaced. Leave a little space between each shrimp for even cooking.
Place the skewers on the preheated grill and cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque, being careful not to overcook them. Use any leftover marinade to baste the shrimp while grilling for extra flavor.
Once done, remove the skewers from the grill and season with salt and pepper to taste. Garnish with chopped green onions before serving.
