In a large mixing bowl, combine the cauliflower florets, olive oil, minced garlic, salt, black pepper, and paprika. Toss until the cauliflower is evenly coated.
Spread the coated cauliflower in a single layer on a baking sheet.
Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is tender and golden brown, flipping halfway through for even cooking.
Remove from the oven and sprinkle the grated Parmesan cheese over the hot cauliflower. Return to the oven for an additional 5 minutes to allow the cheese to melt.
Once done, remove from the oven, garnish with fresh parsley, and serve immediately.

For extra flavor, try adding a squeeze of lemon juice before serving.
