Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the mini chocolate chips and crushed graham crackers, ensuring an even distribution throughout the dough.
Press half of the cookie dough evenly into the bottom of the prepared baking pan.
Sprinkle the mini marshmallows on top of the dough layer, followed by the remaining cookie dough, spreading it gently over the marshmallows.
Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and the center is set.
Remove from oven and let the bars cool in the pan for about 15 minutes, then slice into squares and let them cool completely on a wire rack.
Notes
Serve these bars warm with a drizzle of chocolate sauce on top and a sprinkling of extra crushed graham crackers for added crunch!
