In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
In a mixing bowl, combine the cooked spinach, feta cheese, cream cheese, dried oregano, salt, and pepper. Mix until well combined.
Carefully slice each chicken breast horizontally, creating a pocket for the filling. Be careful not to cut all the way through.
Stuff each chicken breast with the spinach feta mixture, dispersing it evenly among the breasts. Use toothpicks or kitchen twine to secure the openings.
Place the stuffed chicken breasts in a greased baking dish. Season the tops with a pinch of salt and pepper.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Remove from the oven and let rest for 5 minutes before serving.
