In a blender, add the sliced strawberries and blend until smooth. If you prefer some texture, you can pulse the strawberries a few times instead.
In a mixing bowl, combine the blended strawberries with coconut milk, honey or maple syrup, vanilla extract, shredded coconut, and a pinch of sea salt.
Stir the mixture until everything is well combined. Taste the mixture and adjust sweetness if necessary.
Pour the mixture into popsicle molds, filling them about 3/4 full to allow for expansion during freezing.
Insert popsicle sticks and freeze for at least 6 hours or until solid.
To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
Notes
Serve on a colorful plate and garnish with fresh strawberries and shredded coconut.
