In a large mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, sea salt, and black pepper. Mix well to create a marinade.
Add the cauliflower florets to the bowl and toss until they are well coated in the marinade.
Spread the coated cauliflower evenly on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, stirring halfway through for even cooking.
Once done, remove from the oven and check for seasoning, adjusting with more salt or lemon juice if desired.
Transfer to a serving dish and garnish with freshly chopped parsley and a sprinkle of red pepper flakes if using.
