Instructions
In a saucepan, bring the vegetable broth to a boil.
Once boiling, remove from heat, stir in couscous, cover, and let it sit for 5 minutes to absorb the liquid.
Fluff the cooked couscous with a fork and transfer it to a large mixing bowl.
Add the halved cherry tomatoes, diced cucumber, chopped red onion, parsley, and mint to the bowl.
In a small bowl, whisk together the lemon juice, lemon zest, olive oil, salt, and pepper.
Pour the dressing over the couscous mixture and toss gently to combine all ingredients evenly.
Optionally, sprinkle the crumbled feta cheese on top before serving.
Notes
Feta cheese is optional for added flavor.
